Rice sticks/noodles uppuma (Serves 4)

This is a simple and quick uppuma which can be prepared in minutes...

Buddha brand rice sticks 7 oz, (half of one pkt)
Onions 1 medium, thinly sliced
Green chilly 1 no, julienned
Ginger ½ inch piece, finely chopped
Carrot 1 no, julienned
Curry leaves a handful
Grated coconut ½ cup
Mustard seeds 1 tsp
Dry red chilly 2 nos
Water 4 cups
Salt as needed
Oil 1 TBSP


Boil water in a saucepan until rolling boil. Switch off the flame and add the rice sticks and immerse well. Leave it for 10 minutes or until rice sticks are soft. Drain in a colander and keep aside.

Heat oil in a deep bottomed pan. Splutter mustard seeds and add dry red chilly. Add julienned ginger and sauté for 30 seconds. Add sliced onions followed by carrots and green chilly. Saute for 3-4 minutes. Add curry leaves, salt and the rice sticks. Mix well to combine. Lastly add the grated coconut and switch off the flame. Serve hot with pappadam…


The rice sticks are really long, if you want, can roughly cut them using a kitchen scissors
You can also add roasted cashews and raisins as garnish
Rice sticks will be available in any Indian or oriental stores

  9. The noodles are looking pretty good my dear(s). I love the rose on top. I have a dish that I made 3 months ago with couple of rose decoration. But I didn't do a good job of making that rose. So that recipe is yet to get published cause of that. :(
