Grated coconut 2 cups
Sugar 1 cup
Ghee/clarified butter 2 TBSP
Cardamom powder a pinch
Almonds for garnish
Line aluminum foil and then grease butter onto a rectangular cake tray (or any other container that you plan to set the burfi) .
Heat a deep pan, preferable non stick pan at medium heat. Roast the grated coconut until all the water evaporates. It should not change its color. This will take 10-15 minutes. Next add the sugar and continuously stir until it dissolves. Then add ghee and stir constantly till the coconut mixture starts to forms a single clump and leaves the sides of the pan. Transfer the burfi to the greased tray and even the surface with the back of a buttered spoon. Using a knife cut lines in the shape you want it. Allow to cool. Separate the pieces out and enjoy!!! Store leftover in the fridge.
