What Vadas are to South Indians is exactly what samosas are to North Indians. Also, just like vadas made an indelible impression up north , the samosas became a house hold name in the south as time passed. Made in various sizes, shapes and flavors, these anytime snacks are basically deep fried, stuffed, savory pastry. They are generally conical to triangle shaped and can be vegetarian or non vegetarian depending on the stuffing. Vegetarian samosa’s stuffing usually contains a mixture of potatoes, green peas, onions, coriander leaves, any kind of lentils and the list is endless. The recipe given below is of a Kerala style samosa which is much more flatter than usual and is hugely popular among the canteens and bakeries across the state.
Egg roll wrappers 12-15 sheets
Water ½ cup
For the filling
Potato 2 medium, boiled and mashed crumbly
Green peas ½ cup, fresh or frozen
Onions 1 medium, sliced
Ginger garlic paste ½ tsp
Green chilly 1 no, finely chopped
Garam masala 1 tsp
Red chilly powder ½ tsp
Cumin powder ½ tsp
Coriander powder ¼ tsp
Mint leaves 1 TBSP, chopped
Coriander leaves 1 TBSP, chopped
Oil 2 tsp + more for frying
Salt as needed
Heat oil and sauté sliced onions until light golden color. Add ginger garlic paste and green chilly and cook for 3 -4 more minutes. Next add chopped mint and coriander leaves. Cook for a minute or two and then add red chilly powder, coriander powder, cumin powder and garam masala. Cook this until raw smell goes off. Add green peas and salt and cook for 5-8 minutes. Lastly add boiled and mashed potatoes. Mix well to combine and switch off the flame. Set aside.
Now take each egg roll wrapper and cut into half. Shape each halves into cones by glueing the sides together with water (as shown in the figure). Place a spoon full of the filling and wet the top edge and press firmly to get sealed. Set aside. Repeat the same until the filling is finished.
Heat oil in a deep pan for frying. When hot enough, add the samosas one by one and deep fry until golden brown in color, turning them occasionally.
