Muringa ila masala thoran/Drumstick leaves masala stir fry (Serves 2)

Muringa ila thoran

Muringa ila/ drum stick leaves 2 cups, unpacked
Grated coconut a little more than ½ cup
Rice 1 tsp
Urad dal 1 tsp
Mustard seeds ½ tsp
Dry red chilly 2 nos
Garam masala 1 tsp
Curry leaves a few
Oil 2-3 tsp
Salt as needed


Heat oil in a deep bottom pan. Splutter mustard seeds and dry red chilly followed by curry leaves, rice and urad dal. Cook this for a minute or two and then add garam masala. Fry till a nice aroma develops and add the drumstick leaves and grated coconut. Mix well and add salt. Cover and cook for about 5-10 minutes at medium heat or until the leaves turn into a dark green color as seen in the pic. Remove lid and give a final mix and turn off stove. Enjoy with rice…
