Breadfruit stir fry

Breadfruit (Kadachakka)- as unique as the name sounds this blessing abundant in the state of Kerala is a culinary delight. In season, this vegetable, in its many forms was a regular component of a Keralite’s lunch and dinner menu. Thank god it is still in abundance at my in law’s place and amma (Mom) can still work wonders using it… 

Kadachakka/breadfruit 1 medium, peeled and cut to thin pieces
Shallots 8-10, thinly sliced
Garlic 3 cloves, sliced
Coconut slices ½ cup
Green chilly 2 nos, slit
Turmeric powder ¼ tsp
Red chilly powder ½ tsp
Curry leaves 2 sprigs
Mustard seeds ½ tsp
Dry red chilly 2-3 nos
Coconut oil 1-2 TBSP
Salt as needed


Cook the cut breadfruit/kadachakka with about ½ cup water, green chilly, salt and turmeric powder until water is evaporated and the breadfruit is soft. Set aside.

Heat oil in a wide mouth pan and splutter mustard seeds followed by dry red chilly and curry leaves. Next add the sliced shallots, garlic and coconut pieces. Saute this for about 5-6 minutes at medium heat or until shallots are translucent. Now add the powders and mix well. Adjust salt and then add the cooked breadfruit/kadachakka. Stir fry for 15-20 minutes at medium heat stirring occasionally or until crisp. Serve hot with rice.
